YOGI TEA® Classic – Ayurvedic prune and chai breakfast muffins

Start your morning on a nourishing and warming note with these Ayurvedic plum kai muffins infused with the rich flavor of YOGI TEA® Classic.

The subtle spices of cinnamon, ginger and cardamom in the tea provide a delicious warming effect, perfect for starting the day. You need: muffin tin

 

 

  • tbsp ground linseed + 6 tbsp water
  • 3 YOGI TEA® Classic teabags
  • 175 ml water
  • 70 ml rapeseed oil
  • 4 tbsp maple syrup
  • ½ vanilla pod
  • 150 g spelt flour (or gluten-free flour)
  • 1 tsp baking powder
  • 50 g rolled oats
  • 50 g chopped almonds
  • 150 g prunes

 

 

 

Preparation

 

1. Mix the ground linseed with water in a small bowl and leave to swell for 10 minutes. Steep 3 YOGI TEA® Classic teabags in 175 ml boiling water for 10 minutes. Preheat the oven to 200°C (top/bottom heat) and grease a muffin tray (or use muffin liners).

 

2. Mix the rapeseed oil, maple syrup, the pulp of half a vanilla pod, the linseed mixture and the tea in a large bowl. Mix the flour and baking powder and add to the bowl together with the rolled oats and chopped almonds and stir until smooth.

 

3. Cut the prunes into small pieces and fold into the batter. Pour 2 tbsp of batter per muffin into each muffin mould and bake the muffins for 20 minutes until golden brown. Leave to cool before serving.
