Ayurvedic minestrone

As autumn approaches, warming colours flourish all around! Lush green leaves turn orange and the sun draws in earlier in the evenings meaning it is the perfect time to get cosy in the kitchen cooking up comforting creations.

 

Our vegan Ayurvedic Minestrone recipe warms the body AND the mind starting from within. It combines a delicious variety of hearty vegetables which bring autumnal colours into your kitchen – a bowl of this healthy soup really does feel like a warm hug! What makes this recipe extra special is our secret ingredient YOGI &;TEA® Bedtime, adding an extra soothing Ayurvedic quality as the notes of chamomile blossom, fennel and valerian root help us to relax. Ingredients for 2 portions

Preparation time: 30 minutes

 

  • 1 carrot
  • 1 stick celery
  • 1 small onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 cloves garlic
  • 2 tbsp tomato purée
  • 1 tsp fennel seeds
  • 1 tsp raw cane sugar
  • ½ courgette
  • ½ fennel bulb
  • 250 g chopped tomatoes
  • 300 ml vegetable stock (or water)
  • 2 YOGI TEA® Bedtime teabags
  • 75 g short pasta shapes, e.g. maccheroni, small pipe rigate, orecchiette
  • 75 g cooked white beans
  • 10 g parsley

 

Preparation

 

  • Finely chop the carrot, celery and onion. Pour the oil into a hot pan and sauté the chopped carrot, celery and onion over a medium heat for 5 minutes. Season with ½ teaspoon salt.
  • Finely chop the garlic and add it to the pan with the tomato purée, fennel seeds and sugar. Cook for a further 1-2 minutes over a low heat.
  • Chop the courgette and fennel into bite-sized pieces, add to the pan, deglaze with the tomatoes and vegetable stock, add the teabags, and leave to simmer over a low to medium heat, covered with a lid, for 10 minutes.
  • Remove the teabags, add the pasta and cook for 6-8 minutes depending on the type of pasta used (follow instructions on the packet). Add the beans, bring back to a simmer, season to taste with the remaining salt and serve garnished with chopped parsley.
